This was my souvlaki dinner that I made the other night and along side is parsley salad, dandelion salad, grape tomato cucumber, kalamata olive salad and homemade taziki (sour cream cucumber dip). I also grilled green peppers and onions to go with the meat. My family ate it all rolled up in a whole wheat pita bread. Here’s the recipe for the souvlaki.
2 1/2 pounds of flank steak
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 teaspoon of oregano
2 tablespoons of olive oil
2 tablespoon of red wine vinegar
1 medium onion, quartered
1 green bell pepper, seeded, cut in chunks
juice of 1 medium lemon
Rinse the pieces of meat thoroughly to remove any debris, and drain for 15 minutes. Combine the oregano, salt, and pepper in a small bowl. Sprinkle the meat with the seasonings, and add oil and vinegar. Cover and refrigerate meat for at least one hour before cooking. (This can be marinated as long as 24 hours before cooking.)
Grill to taste and slice meat thinly and serve.
