Roast Turkey-Arrosto di Tacchino

Serves 6 to 8
12Lb. (5-6 kg) Turkey
1 Apple peeled and cored
2 Celery stalks
2 Tbs. Salt
1 Tbs. Garlic powder
4 oz. Gin
6 Bacon Slices
4 oz. White Wine
1 Cup Chicken Stock
Preheat oven to 260 Degrees.
Wash and dry the Turkey, inside and out.
Cut the apple and celery into large pieces and places inside the bird.
Put in a large roasting pan and cover with salt, pepper, garlic powder, and gin.
Lay bacon over breast and bake at 260 Degrees for 30 minutes.
Lower temperature to 205 and remove the bacon slices to the bottom of the pan.
Pour in the wine and stock and place the turkey back into the oven to steam roast for 90 minutes.
Test for doneness before removing.
Now make the gravy if you prefer and serve.
Cook at 350 Degrees.
