Creamy Garlic & Onion Shrimp

Serves: 2
Carbohydrates Per Serving: 8 carbs
Preparation Time: 10 minutes
Difficulty: Easy


1/3 c olive oil
2 garlic cloves, pressed or chopped
1/3 c chopped onion
2 c cooked shrimp (may use frozen thawed, if desired)
1/2 c heavy cream
1/2 c shredded parmesan cheese
pinch cracked red pepper
salt and pepper to taste

Cooking Instructions:
Heat olive oil in medium skillet, add pressed garlic and onion.
Saute till onions are soft but not browned.
Add shrimp and cook for three minutes.
Pour in cream, Parmesan cheese, cracked red pepper and simmer till sauce thickens slightly.
Add salt and pepper if desired.
