Low Carb Pancake Recipe

I made these today since I’ve been craving a nice Sunday pancake breakfast.  My husband likes these better than regular high carb pancakes.  I think I hit the jackpot with this one.  Plus I also bought Low Carb maple syrup which completed my yummy breakfast.

Coconut Flour Pancakes

¼ cup butter, melted
¼ cup heavy cream
1 teaspoon splenda
½ teaspoon salt
4 eggs
½ teaspoon vanilla extract
¼ cup coconut flour
½ teaspoon baking powder
½ teaspoon cinnamon

Whisk together butter, cream, splenda, salt, eggs and vanilla extract.
In another bowl, combine coconut flour, cinnamon and baking powder.
Mix dry ingredients into the wet ingredients.
Lightly oil skillet and heat over medium heat.
Spoon heaping tablespoons of batter onto skillet to make pancakes about 2-3 inches in diameter.

Makes 12 pancakes
Carbs per pancake: 1.3 g
