I just posted a few days worth of my Food Diary and it’s going pretty good.

Yesterday I was craving some type of dessert and I began to fool around with some ingredients and this is what I came up with.

Almond Coconut Pudding Recipe

Ingredients:

1 cup Coconut Milk
1/2 cup Unsweetened Chocolate Almond Milk
1 Tablespoon unflavored gelatine
1 Tablespoon Unsweetened Almond butter

1 Tablespoon Splenda

Preparation:

Shake the can of coconut milk vigorously to combine well before opening.
In a small bowl, sprinkle gelatin over almond milk; let stand for 5 mins until it’s absorbed.
Meanwhile in another bowl combine coconut milk, almond butter and splenda and mix well.
Once the gelatine and almond milk is absorbed whisk it in the coconut mixture.
Pour equally into 4 small ramekins or small coffee cups (espresso cups).

Total recipe comes out to 5.5 net grams

1.38 net carb per serving… I like to round it off to 1.5 net carb.
