Slow Cooker Minestrone Soup

Slow Cooker Minestrone Soup

1 onion, chopped

1 carrot, diced
2 celery stalks, diced
2 cloves garlic, chopped
2 tablespoons olive oil
5 cups chicken broth
2 zucchini, diced
1 cup romano beans
1 cup cherry tomatoes, halved
1 tsp dried oregano
salt and pepper

In a fry pan saute onion, carrots, celery and garlic in the oil.  Until tender.
In a 5 quart slow cooker add the sauteed vegetables and the rest of the ingredients, zucchini, romano beans, tomatoes, broth.
Simmer for 5 hours on high.

Sprinkle Parmigiano cheese when serving.
