Exercise your mind and body

The cold weather is here and a nice hearty soup is always good to come home too. I know it’s not low carb but sometimes you just have to have some comfort food.

Prepare this recipe before you head out in the cold in the morning and you will come home to meal just waiting for you to enjoy

1-1/2 lbs beef stew meat
1 tablespoon canola
1 14-1/2 oz can of diced tomatoes
1 cup chopped onion
1 cup diced celery
1 cup sliced fresh carrots
½ cup chopped green pepper
4 cups beef broth
2 cups water
1 cup tomato sauce
2\3 cups medium pearl barley
1 tablespoon dried parsley
2 teaspoons salt
1-1\2 teaspoon dried basil
1\2 teaspoon black pepper

Brown meat in the oil over medium heat.
In a 5 quart slow cooker combine all the ingredients and stir in the meat.
Cook 8 to 10 hours on low or until meat is tender.
