Crustless Quiche Lorraine


Sunday-Brunch

I made this for Sunday brunch and it was delicious.

Ingredients

1 lb bacon, chopped
1 large onion, diced
3 cups fresh spinach, chopped
2 ounces swiss cheese, shredded
4 ounces cheddar cheese, shredded
4 eggs
1 cup egg whites
1/2 cup heavy whipping cream
salt
pepper

Preheat oven at 350 degree F

Preparation

In a large pan, cook chopped bacon until crisp.  Remove cooked bacon and place on paper towel lined plate to drain.  Saute onions in the bacon fat, until translucent.  Add chopped spinach to onions, and stir to mix.  Heat about 5 minutes, then remove from heat to cool.  

In a large bowl whisk  eggs, egg whites, whipping cream, salt and pepper.  Add in cheese, onions and spinach mixture, and bacon. Stir thoroughly to mix.
Butter a glass 8×11 casserole dish or quiche dish, pour mixture and spread evenly.

Bake in 350 degrees F. oven 25-35 minutes, or until a knife inserted in the center comes out clean.
Let stand for 5 minutes before cutting & serving.
