Crustless Quiche Lorraine

I made this for Sunday brunch and it was delicious.

Ingredients

1 lb bacon, chopped
1 large onion, diced
3 cups fresh spinach, chopped
2 ounces swiss cheese, shredded
4 ounces cheddar cheese, shredded
4 eggs
1 cup egg whites
1/2 cup heavy whipping cream
salt
pepper

Preheat oven at 350 degree F

Preparation

In a large pan, cook chopped bacon until crisp.  Remove cooked bacon and place on paper towel lined plate to drain.  Saute onions in the bacon fat, until translucent.  Add chopped spinach to onions, and stir to mix.  Heat about 5 minutes, then remove from heat to cool.  

In a large bowl whisk  eggs, egg whites, whipping cream, salt and pepper.  Add in cheese, onions and spinach mixture, and bacon. Stir thoroughly to mix.
Butter a glass 8×11 casserole dish or quiche dish, pour mixture and spread evenly.

Bake in 350 degrees F. oven 25-35 minutes, or until a knife inserted in the center comes out clean.
Let stand for 5 minutes before cutting & serving.

Asparagus Frittata


Asparagus Frittata

Ingredients

2 teaspoons olive oil
1 small onion, thinly sliced
1/2 teaspoon salt
1 pound asparagus, spears cut diagonally into 1-inch lengths
4 large eggs, lightly beaten

Preparation:

Heat olive oil into a 10-inch oven-proof frying pan over medium high heat. Add onions and salt and cook, stirring occasionally, until onions are softened, about 3 minutes. Add asparagus, reduce heat to medium-low, and cook, covered, until the asparagus are barely tender, 6 to 8 minutes. Pour in eggs and cook until almost set, but still runny on top, about 2 minutes. While cooking, pre-heat oven broiler.  Put in oven to broil until browned, about 3 to 4 minutes.  Remove from oven and slide frittata onto a serving plate.

Cut into wedges.
