Full Day Of Eating 11 *Lunch Edition + New Job

I’ve been a stay at home mom for the last 16 years and now that both my kids are going to be in high school this year I decided it was time for me to get back into the workforce.  
Well I got a part-time job working as a supervisor of a retail store, it’s been an adjustment at home since my kids are so use to having me around, also I’ve been trying to plan out my meals for when I go to work and to cook dinner for my family.  Ideally I’d like to use the slow cooker daily but I just don’t have a lot of slow cooker recipes that are low carb friendly, but I’m working on it 🙂

Below are just some of my meals and snacks that I’ve made for myself to take to work.
P. S. I just love my “on the go” plastic container, it’s got everything I need all in one.

Meal Prep #1


Hi Everyone,

Hope you’re all having a great week so far.  I’ve seen many people posting they’re meal prep and I’ve been so eager to try it, Monday I went and bought groceries & I began to cook.

If you plan to meal prep start with 1 meal per day for the week.  Lunch is my busiest time of the day so it makes sense to prep my lunch for the week and I even portioned out some snacks.

Note to self:
Saturday plan menu & go grocery shopping.
Sunday cook & meal prep for the week. (Lunch & Snacks)


Below are the groceries that I bought.  I didn’t really have a planned menu.  I knew I was going to do chicken and salad.

In the picture below you’ll see my lunch & snacks.

4 oz grilled chicken breasts
3 oz baked sweet potato with coconut oil
2.5 cups mixed greens
0.5 cups shredded carrots
1 Tbsp Caesar dressing (not shown)

Calories: 393
Net Carbs: 19
Fibre: 6
Protein: 39 

Baby Spinach & Strawberries (for smoothies)
Blueberries (for protein shakes)
1 cup watermelon 11 gr carbs
Mini bell peppers




Yesterday was fun, I can now say that since I’ve lost some weight shopping is Fun!!!  What?? Really??  Ya no kidding!!! 

I have this family function to go to next month and I needed a pair of dress pants.  I went out yesterday thinking it would take a few shopping trips before I found something.  That wasn’t the case this time, I found dress pants in a size 9 and they were on sale 🙂  I can’t remember the last time I was in a size 9!!

I’m trying not to buy too many clothes now since I still have weight to lose, so to find something that fits and it’s on sale is a good thing.

Anyhow the beginning of this week so far has been challenging since there’s my kids Easter chocolate still lingering around and it was my handsome husbands birthday the other night so we had cheesecake and ice cream!!! on that same night I had potato chips while watching a hockey game.

But last night while we were watching another hockey game (it’s the playoffs)  they had chips and I had kale chips with ranch dip.  Yum!!

Yesterday and today I’ve been really good.

Here’s my lunch from today.  Garlic shrimp, low carb bread, romaine salad with French dressing.

Food and Shopping

Went shopping with my daughter and we both came home with some good deals.  These are my boots, they were $265 and I got them for $90.  I also bought a pair of yoga pants.

These are my daughters clothes, all this for $25.

Lunch at the mall, she had a burger and fries and I had a chicken shawarma plate, 3 types of salad with hummus and chicken.  This was from Villa Medina, it was so good.  I have a feeling next time she’s going to want what I ordered.

My dinner, beef tenderloin topped with blue cheese and broccoli.  What you don’t see is the baked french fries that I made for my kids but I had some too.  Then it went a little more down hill when we were watching a movie they broke out a bag of chips and I had some too.

Where are the kale chips when you need them.  ggrrrrr!!!!

Easy Cabbage Soup Recipe

Today I went and had my nails refilled, I was well over due.  I get Bio Sculpture Gel done and they last forever.  This is the one thing I do for myself that makes me feel pampered.  They’re so pretty and shinny right now, love it.

Hey girls, what’s the one thing you do to feel pampered?

For my lunch I was in the mood for soup but I didn’t have a lot of time.
I had leftover boiled cabbage leaves from last nights delicious cabbage rolls.  After a brain storm and then calling my mom for some ideas, here’s what we came up with.

Easy Cabbage Soup

6-8 Boiled cabbage leaves  (I used savoy cabbage)
2 celery ribs
1/2 small onion, diced
2 garlic, minced
1 can Campbell s tomato soup

Remove the thick stem from the cabbage leaves and chop into small pieces.
In a pot sauté onions, garlic, celery, and cabbage for 5 minutes until tender.
Add one can of tomato soup  and 1 1/2 cans of water.
Bring to boil and simmer for 15 minutes.
Pour in to bowls and sprinkle with grated Parmesan cheese.

PC Ceasar Salad Dressing, 1 tbsp = 0 Net Carbs
Total Net Carbs: 2 Net Carbs

Cream cheese- NN light, 1 tbsp = 1 Net Carb
Biscotti-Lilly’s Sugar Free Chocolate 1 pc = 1 Net Carb
10 Almonds = 1 Net Carbs
Laughing Cow Original Cheese, 2 servings = 2 Net Carbs
Herbal Tea, 3 cup = 1 Net Carbs
Total Net Carbs: = 6 Net CarbTotal

Net Carbs for today : 28.5  Net Carbs

Target for today:  20 Net Carb

SELF!!!  Congrats!!! on drinking my water these past 2 days.
I’ve had some serious munchies today, I find that when I don’t have protein for lunch, I’m famished an hour later.

Holy Molly apples are really high in carbs but I miss my fruit.
