Low Carb Pizza Crust Recipe

Unbaked – It’s about 10 inch round pizza crust

Baked

Toppings: Pizza sauce, mushrooms, olives, pepperoni, mozzarella, oregano.

Fully cooked and it’s not complete if you don’t have paper plates!!!
It’s a Win Win all around!!

Low Carb Pizza Crust Recipe

Ingredients:
2 cups low fat mozzarella cheese, shredded
2 large eggs
2 tablespoons flax meal
2 tablespoons coconut flour
½ teaspoon baking powder

Preparation:

Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
In a bowl mix cheese, eggs, flax, coconut flour, and baking powder together until a sticky wet dough is formed. Spread with a fork  (or your hands) to ¼ inch thickness on a baking sheet.

Bake for 20 minutes in preheated oven.   Remove from oven, flip crust over and add pizza toppings.  Bake until cheese is melted and bubbly.
Slice in 4  and serve.

Weigh In and Waffle Pizza Recipe

I had my weigh in today and it went great thanks to the flu I had last week, I lost 3.5 lbs 🙂

Starting Weight:      189 lbs
Current Weight:      154.5
Goal Weight:             135 lbs
Total Loss to date:   -34.5 lbs
Pounds to goal:         19.5 lbs

By the way this recipe below is not a low carb recipe, but I’m going to work on something and let you know how it turns out.

Last week my mom tells me that she saw Rachel Ray make Pizza Waffles and Calzone Waffles and even A Brownie Waffle for dessert.  So I checked out her website and thought it was a great idea.

So this morning I made a ham, cheese and green olive Calzone Waffles for my sons lunch.  It smelled like a pizzeria in my kitchen.  It took all my willpower not to take a bite, the smell was enough for me.  Here’s a few pics of my sons lunch, it was crispy and so easy and fast.  My daughter has placed her order for her lunch tomorrow.

When the moon hits your eye…


Like a big pizza pie that’s amore.

I tried to add that song in the background but for aome odd reason mp3 is not an option.  That’s annoying!!  So the best I could do is have a video of Dean singing, I love this song.  Enjoy!!!

Anyhow getting back to PIZZA!!!  That’s what we had for dinner last night.  Pizza on a low carb diet,  Yuppers!!!
First I need to start off by saying that although I’d love to have my husband cook more often he’s not a cook by any means.  A few months ago my mom came for a visit and showed my husband how to make homemade pizza.  He took notes and yesterday was the first time and he was excited to make some pizza.  I have to say he did really good, my kitchen wasn’t a disaster area. He made two pizza and they turned out great.  One is a pepperoni and the other is steak and bacon pizza.



 

 

Now I wasn’t left out in the cold here I had my own low carb pizza.  It also turned out really good too.  I used cauliflower as the base/ dough and half the pizza was tomato sauce, bacon and olives and the other half was no sauce but  leftover roasted peppers and onions from last night’s dinner, with cheese.  YUMMY!!!

Needless to say my kids didn’t want to try mine, they didn’t know what they were missing.

Ok so here’s my Low Carb Pizza recipe.


 

 

 

 

Pizza Dough

Ingredients:
2 cups Cauliflower, cooked, mashed

2 cups Mozzarella Cheese, shredded
1 large Egg
1 egg white
3 TB chopped parsley
1/2 tsp Oregano, ground
1/2 tsp Garlic powder
1/4 tsp Half Salt

Preparation:
Chop a whole cauliflower and boil until fork tender.  Let cool and place in food processor and puree.  (Can be frozen in small baggies for easy use next time)

Combine the rest of the ingredients and cauliflower in a bowl.
Place parchment paper on a cookie sheet.
Spread a thin layer of mixture in the pan and bake for 20 mins or until golden brown.
While the crust is in the oven, you can prepare the pizza toppings.

Pizza Topping: (Here’s the fun part you can add whatever you want)
Pizza sauce

Mozzarella
Olives
Pepperoni
Mushrooms
Bacon

Bake at 350 or broil until the cheese is melted.

My Low Carb Daily Food Log – Sunday

Coffee 8 oz, 1% Milk 2 Tb, Splenda 1 tsp = 2 Net Carbs
My Low Carb Bran Chocolate Muffin = 0.5 Net Carbs
Total Net Carbs: 2.5

Lunch:
Kaizen 100% Whey Isolate Vanilla Protein Powder,1 serving = 1 Net Carbs
0.5 cup Blueberries, frozen unsweetened = 8 Net Carbs
Total Net Carbs:  9 Net Carbs

Dinner:
Mom’s homemade spinach pizza = 19 Net Carbs
0. 5 cup Romaine Lettuce = 0 Net Carbs
Spanish Olives – 2 Olives = 0 Net Carb
PC Ceasar Salad Dressing, 1 tbsp = 0 Net Carb
Total Net Carbs: 19 Net Carbs

Snack:
1 Biscotti-Lilly’s Sugar Free Chocolate = 1 Net Crabs
Total Net Carbs: = 1 Net Carb

Total Net Carbs for today : 31.5  Net Carbs
Target for today:  20 Net Carb


SELF!!! You kinda screwed up today with the carb loaded pizza.
But I have to explain since this is a rare occurrence for me.
I was on a course from 11am – 3pm but it didn’t end until 8:30pm.
We all went without lunch and dinner and I only had a small bottle of water so when I got home I ate what was ready to eat.  Oh man did it taste good, mom’s homemade spinach pizza. YUM!!!
I could’ve eaten more than I did but it was so late and I knew that if I don’t control myself I would’ve really regreted it in the morning with a stomache ache.

I’m so thirsty I feel like a dried up prune.  But I plan on drinking a lot tomorrow to make up for it.

By the way it’s 5:30 am and I’ve been up since 3:00 am.  I’m going to be a basket case tomorrow.

Chicken Pizza Recipe


Chicken Pizza

Chicken Pizza

Serves 1

Ingredients 

1 boneless chicken breast, pounded flat if thick
Salt, pepper, garlic powder and Italian seasoning, to taste
2 tablespoon pizza sauce
8 slices pepperoni
1 teaspoon oil
2 fresh mushrooms, sliced
1/2 red pepper pepper, sliced
1 ounce mozzarella cheese, shredded


Preparation

Season the chicken with salt and other seasonings.
In a non stick pan add oil and chicken and cook on medium to high heat.
Remove chicken when cooked and place in plate.
Saute mushrooms, red peppers until tender; set aside.
I cooked the pepperoni too but you don’t have too.

Spread the sauce over the chicken, then top with the pepperoni,mushrooms, red peppers and cheese.
Sprinkle with a little additional oregano or Italian seasoning.
Microwave until hot and the cheese is melted.


Chicken Pizza was my dinner while I made homemade pizza for the rest of the family.
